Trout fillets approx. 10-20 cm long (depending on the size of the fish). The package contains 3-4 fillets with skin and without bones.
The trout comes from a farm in the village of Pravíkov in South Bohemia, specifically from the company Bio Fish s.r.o. The fish are raised in controlled tanks or ponds with optimal conditions for growth and health, filleted by hand and packaged with attention to hygiene standards and quality. The feeds used are approved according to current legislation.
Freezing is a completely gentle and safe way of preserving food when the correct technological procedure is followed. We do not add anything extra to the fish during the processing - no water or additives. The weight listed for each portion is therefore the actual weight of the meat. If the fish fillets are thawed properly, the taste and nutrient content are comparable to freshly caught fish.
We freeze our fish to ensure you have meat at home with a quality almost indistinguishable from the moment it was caught. Fishing takes place on small fishing boats that go out to sea in the morning and return in the evening, which is why our fish is portioned, packaged and frozen within 24 hours of being caught. This avoids the depletion of marine ecosystems and the wasting of so-called "unwanted catches", as is the case with freezing on large floating factories that are at sea for days or weeks.
We don't need to artificially increase the weight of our products by adding water to the muscle of frozen fish. You can tell such fish at the first taste; as soon as the water is released during cooking, you are left with only tasteless meat.
One (and the only acceptable) form of water content in frozen food is a protective glaze. It is applied to the surface of the fish or seafood (typically prawns, for example) and protects the fish from freezer burn. This protective layer ranges between 5-20% and must always be stated in the product composition! Therefore, if the fish is not vacuum-packed, water in the form of a protective glaze is even desirable for preserving its quality.
I'm grateful that Boxxi exists because it gives me the opportunity to buy fish from a place I trust, knowing it's sustainably sourced, safe, and beneficial to my health. I'm just worried they might have to close down again. That would be a great shame. I don't think there are many fish shops that care about the environment. Very few.
Excellent tuna, excellent salmon. Both were used for sushi, with some of the tuna going into tuna tartare. Both meals were absolutely delicious. And what about the service in the shop? Perfect, helpful, and gave advice on how to defrost the fish. I'll be coming here; I'm glad shops like this exist. Big thumbs up.
